Breakfast Apple Pudding

Ingredients

1/2 a medium apple, chopped into cubes1 slice of light bread torn into pieces1/4 c unsweetened vanilla almond milk1 tsp fat free cream cheese1/4 c liquid egg whites1/2 tsp cinnamon1/8 tsp nutmeg1/4 tsp vanilla (or 1/8 tsp ground vanilla beans)1 tbsp sugar free maple syrup (I use Walden Farms)1/2 tbsp chopped walnuts
Preheat oven to 350 and lightly spray or oil a ramekin/baking bowl. Set aside.
In a medium bowl whisk together milk, egg whites, maple syrup, vanilla, cream cheese and spices; then mix in the apple and bread, stirring to coat evenly. Add in walnuts last and transfer to baking dish. Bake for approximately 20 minutes (my oven always needs a little longer) and then broil for another 3 (DON'T over broil--it will burn!!).
Serving Size: makes 1 serving

I really enjoyed it. I made it a little different. I omitted the maple syrup (didn't have any); I use skim mild instead of vanilla almond milk; I used almonds because I didn't have walnuts. And I baked it in my electric skillet instead of the oven. I had to bake it for 25 minutes instead of 20. - 4/25/18

Very good, & will do often & can vary fruit. I used a rather "hard" pear that would not ripen and baked this at least twice as long till set up well, & I forgot about the broiling and will do that next time, so that will shorten time. very good, like recipes for one, very convenient.
