Cilantro Rice and Bean salad

Ingredients
5 cups cooked brown rice2--15oz cans of black beans, drained and rinsed1 bunch of cilantro, rinsed and stem removed1/4 cup olive oil1 chipotle pepper in adobo2 vine ripened tomatoes, small dice1 lg onion, diced
Directions
cook the rice and let cool. drain and rinse black beans and allow to drain. rinse cilantro and allow to dry. put the pepper, olive oil, and cilantro into a chopper and blend until pesto-like consistancy. chop onion and tomatoes. Mix all ingredients together and store in an air-tight container in the frisge.
