Loaded Veggie Tofu Pie

Tofu, extra firm, 1 block dried and crumbledOlive Oil, 2 tbsp Dijon Mustard, 6 tsp Soy sauce (shoyu), low sodium, 2 tbspSpinach, fresh, 2 cup (chopped)Pepper, sweet, red, fresh, 1 cup, choppedCarrots, raw, 1 cup, chopped 4 spring onions (chopped)1 Cup celery leaves (chopped)1 small tomato (sliced)2 Tbs. Nutritional Yeast1 tsp. fresh ground pepper
Dry and crumble tofu. Add all ingredients except for the olive oil, tomato, and nutritional yeast.
Put olive oil in a non-stick 9" baking pan.
Press mixture into baking pan.
Put sliced tomato on top and sprinkle with nutritional yeast.
Bake in 400 degree oven for 55 to 60 minutes.
Serving Size: 1/4th of the pie
