Fiberful ham, bean & veggie soup

1 can diced tomatoes1 cup diced ham1 cup white navy beans1/4-1/2 bag frozen vegetables1/2 cup chopped asparagus2 cups vegetable stock1/4 raw onion, diced1 cup small pasta noodles
The vegetable stock I made weeks before by throwing saved veggie scraps in a Crock Pot on high all day, and saving the stock in the freezer. I added 2 cups stock, 1 can of diced tomatoes plus the juice, the beans, ham and all the veggies into a sauce pan. Bring it to a boil and simmer about an hour to mix the flavors. Add the cup of pasta noodles, and boil for 10 minutes to fully cook. Amazing blend of flavors, very low calorie and almost no fat! Omitting the ham makes it vegan as well. You could probably make this in the Crock Pot too, just leave it on low or warm all day and cook the noodles just before eating, or eat without the noodles.
