Easy Salsa-Braised Pork Roast

One 2 1/2-pound boneless pork shoulder roastTwo 16-ounce jars mild salsa One 19-ounce can mild red enchilada sauce
1.Unwrap the pork and remove any string surrounding it. Place it in a slow cooker, and pour the salsa and enchilada sauce on top.
2.Cook for 8 hours, turning the pork over halfway through the cooking, if possible.
3.Before serving, break the pork into 4 to 6 large chunks (it should break apart easily with a fork) and serve over rice with some of the sauce. You can also use a fork to shred the entire roast for instant pulled pork.
