French Onion Soup

Ingredients
5 medium sliced onions4 cups of low-sodium beef broth1 tbs. olive oil3 oz. of mozzarella cheese (part-skim)English Muffin (1/2 per serving)
Directions
Slice onions, sautee in olive oil until carmelized. Add beef broth and reduce to 3 cups of broth. Toast English Muffin topped with 1 oz. mozzarella (in toaster oven); slice one half of muffin into quarters and place on top of soup.
