One boneless skinless chicken breast poached, 2 tblsp olive oil, 4 tbsp apple cider vinegar, 1/2 tsp ground ginger, 1/2 tsp pepper, 1/2 tsp dried minced onion, and 1/2 tsp celery seeds
Combine all ingredients except chicken and let marinate at least 20 minutes. Poach chicken at least 20 minutes, when fully cooked shred with fork, and mix into marinade.
