Balsamic Strawberries with Ricotta Cream

1 cup part-skim ricotta cheese2 tablespoons honey1/2 teaspoon vanilla extract3 tablespoons balsamic vinegar2 tablespoons sugar (Splenda works great!)1 lb. strawberries, hulled & quartered2 tablespoons chiffonade fresh basil leaves
* Put ricotta, honey, & vanilla into a blender or food processor and process until smooth. Refrigerate for 2 hours.
* In a small saucepan, combine vinegar and sugar; bring to a boil, then simmer for 2 minutes. Cool completely.
* In a medium bowl, toss berries with basil and balsamic syrup.
* Divide the cheese cream among 4 cocktail glasses; top with berry mixture and serve.
Serving size = about 1/3 cup cheese cream and 1/2 cup berries
