Mini Turkey Meatloaf loafs or Cupcakes

1 small Onion 20 oz. Lean Ground Turkey Meat1/2 cup Quick Oatmeal2 tsp Garlic Powder1 tsp salt1/2 cup Fat Free Liquid Egg Substitute7 tbsp Heinz Low Sugar Ketchup1 tbsp Worcestershire Sauce1 tbsp Yellow Musturd
Chop onion and saute in 1 tbsp olive oil until they look see through or thin. Approximately 3 - 5 minutes.
In large bowl, combine all ingredients except the mustard and 3 tbsp of the ketchup and mix and blend well. Blend the remaining 3 tbsp of ketchup and the mustard into a seperate bowl. Seperate mixture into 9 Cupcake pan with or without cupcake papers OR into a 9 mini loaf pan. Coat the tops of each of the 9 meatloafs with the mixture of ketchup and mustard. Place on a large cookie sheet in case of dripping.
Cook at 300* for 30 - 35 minutes or until desired doneness.
I suggest you leave the mixture a little below the level top of each muffin or loaf top to pevent to much leakage.
Serving Size: makes 9 cupcakes or 9 mini loafs
