Lemon Orzo Salad with Asparagus and Tomatoes

12 oz. orzo1 lemon, zested and juiced1 bunch of asparagus cut into 1 inch pieces1 pint of cherry or grape tomatoes4 Tbsp Extra Virgin Olive OilSaltPepper
Put two large pots of water on to boil with a pinch of salt. In one pot put the asparagus and blanch for 2-3 minutes, depending on thickness of spears, and submerge in an ice bath immediately after. In the other pot cook the orzo to box directions.
While the asparagus and orzo are cooking, cut the tomatoes in halves. In a large bowl mix together the olive oil, lemon juice, lemon zest, salt and pepper. Add the orzo, asparagus, and tomatoes. Mix well.
