Coconut Basil Rice

Ingredients
3/4 c. Lite Coconut Milk, divided1 1/2 c. Water1 - 1 1/2 clove Garlic, minced1/2 tsp. Salt1 c uncooked Long Grain Rice2 T. chopped fresh Basil
Directions
Place coconut milk in a medium sauce pan, reserving 2 tablespoons. Add water, garlic and salt. Bring to a boil over medium-high heat; stir in rice. Cover, reduce heat and simmer 20 minutes or until liquid is absorbed. Stir in reserved coconut milk and sprinkle with basil.
