Daily Garnish mexican Quinoa

Ingredients
1 c quinoa (dry)2 T olive oil1 large white onion10 medium mushrooms, diced1 c black beans (rinsed/drained)1 pint cherry tomatoes, halved1 avocado2 T lime juice
Directions
cook quinoa on stove according to package directions

dice onions and mushrooms, cook over medium heat with 1 T olive oil until lightly browned

Add fluffed quinoa and black beans to pan with mushrooms and onions and heat through

add lime juice, reduce to low heat

stire in sliced tomoatoes and avoocado.
