Directions
Original recipe2 lbs ground beef 1 onion chopped1 tbsp oil1 tsp cumin1 tsp garlic1 tsp chili powder1 can tomato sauce8 - 10" flour tortillas4 cups cheddar cheese shreddedMake over Recipe12.5 oz Ground Beef 90% lean12.5 oz Ground Turkey 93% lean1 cup black beans (I make up 2 lbs in advance every month and keep them in my freezer, I don't use canned beans)1 can diced tomatoes DO NOT DRAIN ( I will use chili ready tomatoes but didn't have any when I made it this time)1 tsp onion powder1 tsp garlic powder1 tsp cumin ( You can use more if you want more of a kick)1 tsp chili ( I tend to use less if I am using the chili ready tomatoes)10 - 10" low carb whole wheat tortillas12 oz shredded cheese ( I tend to make sure it is finely shredded because it goes farther that way)
Brown hamburger and turkey.
Drain meat ( I rinse all my meat but that is optional).
Add beans, tomatoes, and seasonings. Heat through.
Take 4 - 20" x 2" strips of foil. Can use heavy duty. If using regular foil double up the thickness.
Arrange each strip in the crock pot to form a wheel like handle.
Place 1 tortilla in the bottom of the crockpot on top of the foil. Layer with meat mixture followed by cheese.
Repeat 10 layers ending with cheese.
Place on high for 1 - 1.5 hrs. Can be done on low for 3-4 hrs.
When done grab the foil to lift out. ( Makes clean up a breeze)
Cut into 12 wedges and serve.
Enjoy!
