Mediterranean Quinoa Pilaf

Ingredients
2 Cups vegetable broth1 cup quinoa1 1/2 T olive oil1/3 cup diced sundried tomatoes1/2 large onion, chopped1 clove garlic, mincedparsley and/or basil2 T nuts
Directions
Cook quinoa. Add sundried tomatoes to pot, return cover and let sit 5 minutes. Meanwhile, in med. skillet, heat oil and cook onion until soft and translucent. Then add garlic and saute until fragrant but not rown,. Fluff the steamed quinoa and tomatoes, then add the onion/garlic mixture, nuts and herbs. You can season additionally with salt and pepper.

    Made this recipe and added leftover roasted chicken as suggested for a heartier dish. Easy to make and very tasty. Used my sundried tomatoes in olive oil and the olive oil from the jar in the recipe. Leftovers were great as a cold salad for lunch! - 5/31/13
