Chicken and Sweet Potato Sticks with Vegetables

Ingredients
1lb. chicken breast2TBSP. olive oil2lbs. sweet potatoes, peeled and cut into sticks1/2 lb. white button mushrooms3 large leeks5 cloves garlic1/2 tsp. dried rosemary1/2 tsp. salt1/2 tsp. ground pepper
Directions
1. Cut chicken breast into 2-by-2 inch pieces. Set aside.

2. Heat oil in a skillet on medium-high, Place chicken pieces, sweet potato sticks, mushrooms, leeks, garlic, rosemary, salt and pepper in the skillet and stir.

3. Cover skillet with a lid and reduce heat. Cook on low until potato sticks are tender, about 35 minutes.

4. Remove from skillet and serve.
