Chocolate Sorbet

Ingredients
1 cup sugar 1/2 cup cocoa powder 1-1/2 cups water 1 tsp vanilla essence 2 tbsp liqueur, such as rum, brandy, Framboise, Kahlua, creme de menthe
Directions
Combine the sugar and cocoa powder in a heavy-bottomed saucepan. Gradually mix in
the water. Place over medium heat, bring to a simmer, and stir until the sugar dissolves.
Increase the heat and bring to a boil. Boil the syrup until it is dark, glossy brown, 1-2
minutes. Pour the mixture into a bowl and stir in the vanilla extract and liqueur of
choice. Cover and chill until cold, then freeze.
