Pumpkin Spice Breakfast Cookies

Ingredients
1 Cup Oatmeal1 Cup Whole Wheat Flour1/2 Cup All-Purpose Flour1/2 tsp Salt1 tsp Baking Soda1 tsp Pumpkin Pie Spice1 tsp Cinnamon2 Eggs1/2 Cup Raisins1 Cup Sugar1 Can Pumpkin - 15 oz1/4 cup Peanut Oil
Directions
Mix dry ingedients - oatmeal, flours, salt, baking soda, spices, cinnamon. Set Aside.

Mix 2 eggs, sugar, pumpkin, oil and raisins, mix until well blended. Stir in dry ingredients until incorporated.

I used a small scoop and made about 42 cookies.

Bake on lightly greased (I used parchment paper ungreased), 350 for 10-12 minutes or until golden.

You can also frost these for a more decadent treat. I use a buttercream or cream cheese frosting.
