Ingredients
Salad: Romaine lettuce, 1 head shredded(5c) Red Quinoi, cooked, 1.5 cup Lentils, cooked, 1 cup Black Beans, rinsed, 2 cup Chickpeas (garbanzo beans), rinsed, 1 cup Red Onions,1 cup, chopped Yellow Sweet Corn, Frozen, 1 cup kernels Peppers, sweet, red, fresh, 1.5 cup, chopped Dressing: Garlic, 3 cloves chopped Lemon juice, .25 cup Olive Oil, .25 cup Balsamic vinegar, 1 Tbsp. Ranch Dressing, 3 Tbsp. Paprika, 1 tsp Curry powder, .5 tsp
Directions
Cook lentils if not using canned. (1/3 dry lentils = about 1 cup cooked.) Mix Dressing ingredients. Mix salad ingredients. Toss together. Done.
