It's All About the Veggies Frittata

Ingredients
- 4 eggs- 1/4 cup skim milk- 1/4 cup finely diced onion- 1/2 cup diced tomato- fresh basil, rough chopped- 1/4 cup chopped zucchini- 1/4 cup diced green pepper- 1/2 cup cheese (I prefer mozzarella but you can use your favorite)- 1 garlic clove, crushed- salt and pepper to taste
Directions
Preheat oven to 375.

Spray pie plate or other round baking dish with non fat cooking spray.

Combine all ingredients (except cheese) in a medium bowl.

Pour into prepared dish and top with cheese.

Bake at 375 for approximately 30 minutes.

Cut into 8 wedges and enjoy!

*The mixture can also be baked in mini muffin tins for bite size servings.

**Crumbled bacon or sausage can also be added for more flavor.
