Stuffed Turkey Meatloaf

2 lbs lean ground turkey2 eggs3/4 cup oatmeal1/2 cup nonfat milk1/2 cup onions1 tbsp dried thyme1tbsp olive oil1 tsp salt1 tsp pepper2 cups prepared stove top stuffing3 tbsp parmesan cheese (optional)
Preheat oven to 350 degrees.
Mix together turkey, eggs, oatmeal, milk, onions, thyme, olive oil, salt and pepper.
Take half of the meat mixture and fill the bottom of a 9x13 greased casserole dish (do not let the mixture touch the sides of the dish. Place prepared stuffing into the middle of the meat. Take the remaining meat mixture and top the stuffing. With your hands seal the bottom mixture with the top, creating a stuffing encased loaf. Top with parmesan cheese.
Bake for 1 hour. Makes 10 servings.
