Salmon Patty Salad

Ingredients
4 cups chopped Romaine6 cups fresh Spinach2 cans Mandarin Oranges, drained1 large Red Onion, cut into rings1 Yellow Bell Pepper, chopped4 cans pink Salmon, drained3 large eggs1 cup of crushed crackers or oats2 Tbsp Old Bay seasoningA large dash or two of TabascoSalt and Pepper to taste
Directions
Combine greens, chopped oranges, onions and pepper in salad bowl. Set aside.
Combine salmon, eggs, crackers or oats, Old Bay, Tabasco, Salt and Pepper. Mash well, and form patties (about 2 inches across).
Pour oil into a skillet and heat. Add patties 6-8 at a time. Cook 5-8 minutes on each side.
Divide salad onto plates, then place salmon patties on top and dress as desired.
