Emergency Balsamic Chicken & Veggies

Ingredients
Olive Oil, 1 tbsp (remove)Onions, raw, 1 medium, sliced thinFresh Oregano, 5 stalksBell Peppers, sweet, red, fresh, 1 medium, choppedZucchini, 1 large, sliced*Balsamic Vinegar, 2 tbsp (remove)Previously grilled Chicken Breast, 2, slicedFresh Chives, 1 handful
Directions
Saute onion & oregano in olive oil until the onion begins to brown. Add peppers, and zucchini. When they begin to soften, add the balsamic vinegar and chicken and a little bit of water. Cover and simmer until the chicken is heated through, then add the chives at the last minute.
