Sweet Potato w/ Hempseed & Salsa

Ingredients
Leftover sweet potato, right out of fridge, topped with salsa and hempseeds
Directions
Cook sweet potato till easily pierced with fork (i used microwave... pierce several times with knife... cook for 4 mins then turn over, then 2 more mins); I'm sure this would be good warm - but this particular recipe - i used baked sw potato right out of fridge and enjoyed it cold/as is - without reheating!
