Cauliflower salad (or side dish)

Ingredients
1 whole cauliflower, leaves and stems cut off2 c. guacomole1 c. shredded cheese5 T. bacon bits5 radishes (for garnish)
Directions
Take leaves and stem off whole cauliflower. Cook it whole, about 12 min, until just softened. Drain and CHILL in ice water. Drain again and put on big plate. Cover with guacomole, sprinkle cheese and bacon bits on it. Use radishes for garnish (make roses, if desired. Cut slices into the sides of radish, not going all the way through, then put in ice water for a couple hours to "bloom,")

Serving Size: I think 5 servings is appropriate, but you could get more out it, depending on the size of your cauliflower.
