Quinoa with Chicken & Cranberries

1/2 cup uncooked quinoa1/4 cup dried cranberries1/4 cup scallion (salad onion) finely sliced60g (aprox 1/2cup) cooked chicken or turkeyFor the dressing:Juice of 1/4 lemon1-2 Tbsp olive oilsalt & pepper to tasteother seasoning if desired (dried thyme, garlic Italian seasoning, etc)
Makes 2 lunch-sized servings. Eat hot the first day, cold the second!
1. Cook the quinoa according to pack directions (usually 10 minutes in boiling salted water).
2. When quinoa has absorbed at least 1/2 the water, switch off heat, add dried cranberries, cover & let sit for 5 minutes.
3. Add scallion and diced cooked chicken, then put back onto heat until chicken is piping hot.
4. Drizzle a few teaspoons of the dressing, taste, then add dressing or salt/pepper to taste.
