Fruit, Nut and Whole Grain Muffins

Ingredients
1 cup whole wheat flour1/2 cup whole grain oatmeal1/2 teaspoon baking soda1 Tablespoon baking powder1 1/2 teaspoons ground cinnamon2 Tablespoons Splenda Brown Sugar Blend (see note)1/2 cup Egg Beaters1/3 cup unsweetened applesauce2 medium (or 1 cup mashed) bananas1/2 cup chopped walnuts
Directions
Preheat oven to 400*F and move oven rack to center. Spray (or paper line) a 12 cup muffin pan. In a large bowl, stir together all dry ingredients (except walnuts). In a small bowl mash bananas and mix together with other moist ingredients. Pour small bowl contents into large bowl contents and mix lightly. Batter may be lumpy. Stir in walnuts. Fill muffin cups about 2/3 full, dividing batter evenly. Bake 12 - 18 minutes (my oven took 16) until toothpick in center comes out clean. Remove from pan and cool on wire racks.
