Ice Cream Sandwich Pancakes

1/2 cup flour1/2 tsp baking powder2 tsp unsweetened cocoa powder 2 tsp sugar2 Tbsp splenda1/16 tsp salt1 Tbsp unsweetened applesauce2 tsp pure vanilla extract4 Tbsp unsweetened vanilla almond milk1 (3.8oz) cup Healthy Choice fudge swirl greek yogurt ice cream1 tsp rainbow sprinkles
1. In a large bowl, combine flour, salt, baking powder and cocoa powder. Mix well; set aside.
2. In another bowl, combine the sugar, Splenda, applesauce, vanilla and almond milk. Mix well.
3. Pour wet ingredients into dry ingredients and stir to combine. Set aside.
4. Preheat a griddle to medium heat. Evenly distribute mixture into 4 pancakes. Turn once when bubbles appear on the top.
5. Spread ice cream between the pancakes and top with sprinkles. Serve immediately.
