Pakistani style bell peppers and beef

2 tbsp canola oil 400 gms lean beef cubed3 large green peppers (bell peppers),roughly chopped1 medium onion, chopped2 medium tomatoes, chopped4 cloves garlic, crushed2 tsp fresh ginger root, crushed2 tsp ground coriander1/2 tsp red or cayenne pepper1 tsp ground turmeric1 tsp salt3 cups water
1. Chop all vegetables and crush garlic and ginger.
2. Heat oil in a deep pan and brown onions.
3. Add garlic and ginger. Brown until slightly sticking to the pan.
4. Add tomatoes and all seasonings. Simmer until all ingredients are soft. Add a few tablespoons of water if necessary.
5. Add beef cubes and mix well. Add about 1/2 cup of water and simmer until liquid is gone.
6. Add the rest of the water and the green peppers, cover and cook about 20 minutes. Meat should be tender and the peppers should yield to a fork but not be too soft.
Serving Size: Makes 6 One cup servings.
