Thai Ginger Mango Tofu Stir Fry

Ingredients
marinade2 cloves garlic1 1/2 tbsp fresh ginger, roughly chopped1 tbsp olive oil1 cup chopped mango1/4 cup agave2 tbsp red wine vinegarjuice of 1/2 lemon1/2 cup orange juicejuice of two limes1 cup orange juice1/4 tsp salt1/4 tsp peppermango sauce1 tbsp apple cider vinegarjuice of 1/2 lemon1 tsp brown sugar1 clove garlic1 tsp soy saucestir fry1 14-oz pack of firm tofu1 medium mangosnap peas1 red bell pepper1/2 head of broccoli1/4 of a white onion+serve with brown rice.
Directions
press tofu for at least 30 minutes and cut into blocks. dry fry in a saut� pan on medium heat. combine all marinade ingredients into bowl, add tofu and cover with water. let tofu marinate for another 30 minutes. chop vegetables and mango and set aside. combine mango sauce ingredients into food processor and blend, adding soy sauce to taste and water for texture.

heat saut� pan on medium and add mango sauce. stir in vegetables. drain tofu from marinade and add to pan, stirring in the rest of mango sauce.

serve over brown rice.
