North Indian Lentils

Ingredients
Lentils, 3 cup Ginger Root, 2 tsp Turmeric, ground, 1 tbsp Garlic, 1 tsp Water, tap, 3 cup (8 fl oz) Lemons, 1 fruit without seeds*Coriander leaf, dried, 5 tbspOlive Oil, .5 cup *Cumin seed, 2 tbsp Onions, raw, 1 large
Directions
-Take tinned, pre-cooked lentils and put in large saucepan with water, ginger, juice of 1 lemon, chopped coriander leaf, garlic and turmeric. Simmer for 10 minutes over a low heat, stirring occassionally to ensure it does not stick. After 10 minutes it should look like a thick soup with some bits still holding shape.

-Add oil to a frypan and brown cumin seeds for about 1 min, then pour oil and seeds over lentils. Stir in.

-Fry onions in the frypan and when they are well done (golden brown and soft), add them to the lentil mixture. Stir in.

- Serve over rice with poppadoms and steamed vegetables.
