Vegan Summer Squash Italian Stir Fry

Ingredients
2 Tbsp Olive oil1 small onion chopped2-3 cloves garlic minced1-2 tsp dried basil or fresh if available1 pinch of Italian seasoning1/4 tsp red pepper flakesSalt and pepper to taste2 Medium yellow summer squash sliced thick and quartered1 Zucchini squash sliced thick and quartered1 Pint grape tomatoes halved1 small can organic tomato sauce1 package Trader Joe's Sausage-less sausage cooked per package directions and sliced into 1/2 inch slices2-4oz Daiya shredded mozzarella cheese ( vegan cheese)
Directions
In large skillet, heat oil over medium high heat, add onion and cook for about 2 minutes. Add garlic and cook for 2-3 minutes or until onions are tender. Add the squash and zucchini, sprinkle with basil, red pepper, italian seasoning, salt and pepper. Cook for about 5 min. then add the tomatoes. Cooke for about 1 minute then add the sausage and tomato sauce. Continue to cook until vegetables are tender. Sprinkle with the Daiya cheese and cook for about 1 minute or until cheese melts.
