Asian Asparagus Salad

1 bunch fresh asparagus, cut into 1in. pieces1 med red bell pepper, chopped into 1/2 in. pieces1 med yellow squash, chopped into 1/2 pieces3 tbsp fat free sour cream1 tbsp Newman's Own Low Fat Sesame Ginger dressing1 tbsp dried parslay*optional - red pepper flakessalt and pepper to taste
Steam asparagus in a steamer basket on the stove, or in the microwave, for about 7-10 minutes, just until it is bright green and crisp tender. Transfer to an ice water bath to blanch and stop the cooking. Place on a plate covered with a paper towel to drain. Set aside.
In a medium bowl, combine the sour cream, dressing, red pepper flakes, parsley, salt and pepper. Mix to combine.
Add the chopped red bell pepper, squash, and asparagus. Gently fold with a rubber spatula until all the veggies are coated and fully combined. Chill in the fridge or serve immediately.
Serving Size: makes 6 1/2c. servings
