Quick and Easy Brown Rice Salad

Ingredients
1 Cup of Brown Rice1 Tomato/ Handful of cherry tomatoes chopped1/2 Avocado- sliced1/2 Lemon - Juiced1 tbsp Olive/ Canola Oil 1/2 Large Cucumber - cubedFeta Cheese - optional chopped parsley - optionalPine nuts - optional black pepper- pinch
Directions
1. Boil rice with 2 cups of water (Brown rice tends to need more water than white grains)
2. chop up ingredients
3. wait for rice to cool and stir in ingredients
4. add dressing
5. stir and serve
