Daphne Oz's Italian Tuna Salad - Modified

Ingredients
1 (5 oz. package) Chicken of the SeaŽ Premium Wild-Caught White Albacore Tuna in Water2 tablespoons thinly sliced Red Onion2 tablespoons diced Red Bell Pepper˝ Apple, unpeeled, cored and diced1 ribs Celery, diced2 Scallions (thinly sliced)1 hard cooked egg, diced1 small clove Garlic, minced2 tablespoons Kalamata, Green Olives, pitted, sliced2 tablespoons Flat Leaf Parsley, chopped2 tablespoons EVOO1-˝ tablespoons dry Red Wine or Red Wine VinegarSea salt and Freshly Ground Pepper3 cups spinach leavesOR6 slices Whole Grain Bread
Directions
1. Combine the tuna, red onion, red bell pepper, apple, celery, scallions, egg, garlic, green olives and flat leaf parsley and toss together in a large bowl.
2. Combine the olive oil, red wine or red wine vinegar, and salt and pepper in a small bowl and pour over the tuna and vegetable mixture, and toss until just combined.
3. Serve on a bed of spinach or whole grain bread.

Serving Size: Makes 3 servings of salad (or sandwich if you add whole wheat bread)
