KP's Black Bean Croquettes, Light

2 15 oz cans of black beans1 cup corn kernels1/2 cup peach salsa, drained of extra liquid1 teaspoon cumin1 teaspoon chili powdercayenne to taste1/4 tsp salt2 oz shaved cheese (cheddar, colby jack, etc)
Crush beans in a large mixing bowl with a potato masher (just crushed to break them up; do not totally mash). Mix in corn, salsa and spices. Mix well.
Form balls of 2 Tbsp of bean mixture and lay onto wax paper. Preheat oven to 425. Let balls set up while oven preheats, or 10 - 15 minutes. Bake for 20 minutes, then top each ball with a shaving or two of cheese. Bake for a few minutes more until cheese is melted.
Serving Size: Makes 2 servings of 8 Croquettes
