Low Carb, high protein Crepes

2 eggs1 egg white1/6 c greek yogurt1 T protein powder (plant fusion brand; whey would add a little more carb)1/4 tsp baking powdera smidgen of butter (1/4T) for pan
Wisk all ingredients except butter together, but don't overwisk. Let it rest a few minutes. Heat a nonstick 9-10" saute or crepe pan until a drop of water bounces. Add a dap of butter to pan and swirl around. It should foam, but not burn. Swirl 1/4 c batter around in pan. Let it cook until the edges start to pull away slightly. Center does not need to be cooked through. Use a wide spatula to turn it over for a minute. Keep crepes warm in 200F oven until all are done.
