Almond Coconut Yam Soup

Ingredients
3 small potatoes2 medium sweet potatoes2 cloves of garlic1 TBS of rosemary1 teaspoon of olive oil1/2 cup of Almond butter1 can of coconut milk, I prefer lite.3 cups of spinachPinch of pepperSprinkle of salt.
Directions
Cut sweet potatoes and potatoes into bite size pieces and place in a pot with three cups of water.

Bring water to boil and cook until potatoes are tender.

Meanwhile, sautée garlic and rosemary in olive oil.

Add coconut milk and almond butter to the pot along with the garlic, and potatoes.

Chop spinach and add to the soup.

Cook soup until spinach is wilted.

Add salt and pepper to taste.

Serves six to eight people.
