Creamy Baked Mac & Cheese

Ingredients
2 cup wheat elbow macaroni2 cups reduced fat sharp cheddar1 1/2 cup whole milk plain yogurt (can substitute lowfat)1 cup whole milk ricotta (can substitute part skim)1 cup cooked, diced ham1 egg lightly beaten1/4 teaspoon salt and pepper
Directions
Cook macaroni according to package directions, you want it to be tender but firm. In a large bowl, combine 1 1/2 cups cheddar, yogurt, ricotta, ham, egg, salt and pepper. Add macaroni. Pour mixture into greased 8 inch square baking pan or square baking tin. Sprinkle top with remaining 1/2 cup cheddar. Bake uncovered in a 350 degree oven for 1/2 hour or until bubbly. Put under the broiler for 2 minutes or until golden brown.
