Cake Batter Protein Pancakes

1/3 c rolled oats1 scoop Muscle Milk Light protein powder, cake batter flavor (1/2 of a full serving)1 tsp baking powder2 tbsp pumpkin puree (or mashed banana for an even more cake-like flavor)2 tbsp 0% Greek yogurt1/4 tsp butter flavoring1/4 tsp vanilla extract (or more to taste)1 tsp sprinkles (carnival-style)1/4 c water3 tbsp liquid egg whites
Preheat pancake griddle to medium heat and spray with nonstick spray.
Combine all dry ingredients in a bowl.
In a separate bowl whisk together wet ingredients; add into dry and mix until just combined.
Gently stir in sprinkles.
Pour batter onto pan approx. 3 tbsp at a time, cooking for about 1 1/2 minutes per side or until fully cooked, flipping once.
Serving Size: makes 2 servings, 3 small pancakes each
