Veggie Omlette

Ingredients
1/2 T olive oil1 T onion, chopped1/8 c chopped tomato1/4 c chopped zucchini1/4 c chopped portabella mushroom1 tsp butter1/2 c Egg Beater1/4 c shredded colby jack cheese1/4 wedge of avocado2 T Kirland Organic Salsa, optional
Directions
Saute veggis in olive oil. When done to the consistency you like, remove from heat. Cook Egg Beaters in butter and when set, put veggies, avocado and cheese in and fold like an omlette. Top with salsa if desired.
