Puffy Fruity Pancake

Ingredients
2 tbs butter4 eggs1 c. milk1 c. flour2 tbs sugar1/2 tsp vanilla1 tbs powered sugar1/2 c. fruit (blueberries or strawberries or frozen mixed fruit works well)
Directions
Heat oven to 425 degrees

Using a deep-dish pie plate, melt 1 tbs butter in bottom of pie plate in oven

Meanwhile, beat eggs with milk, flour, sugar and vanilla

Remove pie-plate from oven and pour batter into pie-plate; scatter fruit on top

Bake 20 minutes or until golden brown

Remove and sprinkle with powered sugar - can freeze any left overs.
