Ingredients
1/2 cup of fresh eggplant cubed (remove skin)1/2 cup of fresh baby carrots chopped1/2 cup of raw celery chopped1/2 cup of raw onions chopped1/2 cup of fresh zucchini or squash sliced2 tbsp of extra virgin olive oil
Directions
Heat olive oil in sautee pan and add vegetables, stirring until soft and tender.
