Vegan Raisin Bran Muffins

Ingredients
1 1/2 cups wheat bran (I use Organic Smart Bran)
1 cup original unsweetened almond milk
1 cup all-purpose flour
1/4 cup packed brown sugar
1 teaspoon baking soda
1/2 cup applesauce (no sugar added)
1/2 apple, grated

1/4 cup raisins
Directions
1. In a small bowl, combine bran and almond milk. Set aside to soak for 10 minutes.

2. Preheat oven to 350 degrees. Put paper liners in muffin pan.

3. In a large bowl, mix together flour, brown sugar, and baking soda. Stir in bran mixture and applesauce. Fold in grated apple. Divide batter into 12 muffin cups.

4. Bake in preheated oven for 16 minutes or until toothpick inserted into center of a muffin comes out clean.

    I tried this recipe today but I altered it slightly by adding cinnamon and vanilla extract, and holy hell, they were delicious. I had to bake them for 23 minutes on 350 in my convection oven, but they were very moist and filling. - 6/13/15
