1 package of Konjac noodles (8.8oz)2 chicken breast tenderloins4 teaspoons reduced sodium soy sauce2 teaspoons rice vinegar1/2 teaspoon sesame oil2 teaspoons cornstarch2 gloves garlic, minced3/4 cup fat free chicken broth2 tablespoons + 1 teaspoon oyster sauce3/4 teaspoon sugar1 cup shaved carrot1/2 cup green peas1/2 cup chopped scallion
cook chicken then slice thinly. drain and thoroughly rinse konjac noodles. prepare marinade by whisking soy sauce, vinegar, sesame oil and cornstarch together. Place chicken and noodles in marinade and let rest for 20 minutes. Prep carrots and scallions. Mix broth, oyster sauce and sugar together and set aside. Spray pan with nonstick spray and saute garlic until fragrant. Add carrots, peas and scallions and heat through. Add chicken, noodle and marinade mixture to pan and heat through. Deglaze pan with broth sauce and heat until sauce thickens. Serve hot.
