Introduction

Ingredients

    1 tsp ground ginger
    1 tsp red pepper flakes
    4 tsp olive oil
    2 cloves garlic, minced
    2 medium scallions, chopped
    4 Tbsp soy sauce, low sodium
    3 Tbsp splenda (or sugar)
    3 Tbsp corn starch
    1 lbs boneless skinless chicken, cut ino bite size cubes
    1.5 C chicken broth, low sodium
    2 Tbsp vinegar

    2 C rice, kept hot - rice not included in calorie counts

Directions

In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.

Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.

Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.

Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving --- RICE NOT INCLUDED IN CALORIE COUNTS

    This was wonderful, my husband and I both really enjoyed it. We used sesame oil and 1/2tsp of red pepper flakes but will probably use 1/4t next time. We also sprinkled some toasted sesame seeds on top. Yummy! - 3/3/09

    This was very good. My husband and 2 year old twin boys really liked the flavor. I served it with brown rice and broccoli. I know this will effect the nutrition count, but I am going to try it next time with some Sherry and low sodium chicken broth. Yummy! - 2/27/09

    This recipe was fantastic! Tasted SO close to real G. Tso! I'm so glad I don't have to give up my favorite Chinese food dish, because of this recipe. My husband and I both said WOW at the first bite. - 5/14/09
