Simple Pumpkin Soup

Ingredients
1kg Pumpkin2 Cups chopped onion50g stock (veg or chicken/beef)750ml Water
Directions
1. Preheat oven too 200 degrees (fan forced)
2. Chop pumpkin and remove skin.
3. Place pumpkin in oven untill slightly roasted
4. meanwhile chop onion
5. Mix stock with water in a large pot
6. Place pot on stove and heat untill boiling
7. Add onion
8. Remove pumpkin from oven and place in pot.
9. Cook over medium heat for 30 - 40 mins
10. Blend with stick blender or mash
Serve as is, or with bread.
