Ingredients
Fresh roasted green chilesLean ground buffaloBlack beansLow fat cheddar or Colby cheeseGarden of Eatin' blue corn tortilla chips
Directions
Prepare roasted chiles by removing skin and seeds. Chop or hand shred into small pieces. Set aside. Cook ground buffalo over a medium heat then add green chiles and black beans. Cook a few more minutes until heated through. Serve in a eco-friendly paper cone or bowl by layering ingredients as follows: lightly crumbled tortilla chips, meat and bean mixture, top with shredded cheese.
