1 clove garlic, minced1 tablespoon olive oil1/2 pound chorizo1/2 pound shrimp1 cup risotto rice1 cup chopped onion1 1/2 cups nonfat chicken broth1 8-ounce can stewed tomatoes, no salt added, undrained and chopped1/2 teaspoon paprika1 dash ground red pepper, or to taste1/8 teaspoon ground saffron1 cup red bell pepper strips1/2 cup frozen peas
Heat garlic and oil in large skillet or paellero over medium-high heat. Remove sausage meat from casings. Add the sausage to oil and stir until brown.
Add rice and onion. Cook, stirring, until onion is transaprent and rice is lightly browned. Add broth, tomatoes, and tomato juice, paprika red pepper and saffron. Bring to a boil; reduce heat, cover, and simmer 10 minutes. And shrimp, pepper strips and peas. Cover and simmer 10 minutes, or until rice is tender and liquid is absorbed.
