3/4 C oatmeal, quick oats1/2 C all purpose flour (I prefer King Arthur)1/2 tsp baking soda1/2 tsp sugar1 egg1 C lowfat Buttermilk2 Tbsp butter, melted
In a bowl mix oats, flour, baking soda and sugar. Combine the egg, buttermilk and butter; stir into the dry ingredients just until moistened. Pour batter by 1/3 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden.
