Chewy Oatmeal Cookies

Ingredients
2 sticks (240 g) Butter (unsalted)1 cup brown sugar2 medium eggs1 1/2 cups of white flour3 cups of rolled oats1 tsp. baking soda1 tbsp. cinnamon1 tsp. nutmeg1 cup of raisins (optional).
Directions
Whip the butter (room temperature), sugar and eggs together.
In another bowl, mix the flour, baking soda, cinnamon, nutmeg and oats. Then mix them into the butter, and add the raisins.

Turn the oven on to 350 F (180 C), and meanwhile, chill the cookie dough (this is important, if the cookies enter the oven at room temperature, they spread all over the sheet and meld into one huge flat cookie). I even put it in the freezer for better effect.

When the oven is ready, place medium sized (an inch and a half to two inches in diameter) or small (about an inch or less in diameter) balls, an inch apart. You don't need to put anything on the cookie tray, they will come off themselves.

They will be ready in 5 to 7 minutes.
